Easy Homemade Mini Sausage Rolls with Pie Crust

These Easy homemade sausage rolls are made with flaky and crisp store-bought pie crust instead of the traditional, doughy store-bought puff pastry roll. Mini Sausage rolls are similar to the famous British sausage rolls but fun-sized and have a snappy attitude.

These are in the top 5 of my favorite easy appetizers to serve as great anytime finger food snack, game day party food, or a quick grab-and-go breakfast.  Everything but the Bagel Seasoning tops these fun-size pie crust sausage rolls for an extra layer of savory goodness.

WHY YOU’LL LOVE THIS RECIPE

  • This homemade sausage roll recipe uses store-bought pie crust and pre-cooked breakfast sausage. No need to mix up a sausage filling or homemade pastry dough. It’s quick and easy to put together.
  • Everything But the Bagel seasoning adds a special topping touch that’s full of savory sesame seeds, coarse black pepper, onion powder and flakes, and garlic powder. Easy, already done seasoning ready in just a few shakes.
  • Using a boxed pie crust instead of a ready-made puff pastry gives these rolls a crisp snap instead of a soft, doughy texture. You will never have a soggy bottom on these mini sausage rolls.
  • These almost homemade sausage rolls can be assembled and cooked ahead of time. Store in an airtight container in the freeze for a quick breakfast or snack. Just heat them up in the air fryer or microwave.
  • The best thing about these popular snacks is mixing bowls are not required! Just a biscuit cutter, a large skillet, and a baking sheet.

WHAT YOU’LL NEED TO MAKE MINI SAUSAGE ROLLS

  • Breakfast Link Sausage: chicken, pork, or Vegan pre-cooked breakfast sausage
  • Pre-packaged rolled Pie Crust
  • Cheese: Spreadable Laughing Cow Cheese Wedge, cream cheese, or sliced cheddar cheese
  • Everything But the Bagel Seasoning
  • 1 beaten egg (optional)

HOW TO MAKE HOMEMADE SAUSAGE ROLLS?

  • STEP ONE – Roll out refrigerated pie crust and let sit for 10 minutes. Preheat the oven to 400 degrees.
  • STEP TWO – Brown the pre-cooked sausages in a large skillet over medium heat until brown and not pink in the center. Drain on paper towels. (non-stick skillet preferred)
  • STEP THREE – Roll out room temperature pie crust and cut with a biscuit cutter starting from the outer perimeter of the circle. You should be about to get 12 or 13 circles.

  • STEP FOUR – Spread half of the cheese wedge on the dough surface. Lay the sausage link in the center and roll it up. Pinch the dough together at the seam.
  • STEP FIVE – Place on a lined baking tray lined with parchment paper that has been sprayed with spray oil.
  • STEP SIX – Using a pastry brush, brush the tops with egg wash. (optional step)
  • STEP SEVEN – Sprinkle Everything But the Bagel Seasoning on top of the rolls.
  • STEP EIGHT – Bake at 400o for 20-25 minutes or until golden brown.

INGREDIENT SUBSTITUTIONS

Variations

  • You don’t have to use chicken sausage…any kind of meat that’s cylinder will do. Pork sausage, Veggie sausage, cut hot dog weenies, big boy little smokies…your choice.
  • If meat isn’t your thing, Beyond Meat or Incredible Meat meatless products taste almost like meat but aren’t. 
  • A cold stick of your favorite cheese would be delicious. Jalapeno Cheddar…Cheddar…Mozzarella…Monterey Jack…Colby Jack…I’m definitely making these with cheese next time.
  • The crust substitutions are endless and more than likely you already have a few on hand if you’re out of pie crust.
  • Reduced fat crescent rolls, biscuits, tortillas (cut into Forths), crustless bread (rolled flat), 2 ingredients Weight Watcher Dough, puff pastry, phyllo dough…so many options.

PRO TIPS

Use a standard-size biscuit cutter and breakfast-size sausage. The circle of crust and cylinder shape of sausage is a perfect equal portions match.

​The egg wash step is optional, but it really adds a snap and golden crust color. Plus, it helps the seasoning stick better.


​HOW TO SERVE THESE DELICIOUS HOMEMADE SAUSAGE ROLLS

Serve these as finger food with Jalapeno Ranch Dressing, honey mustard sauce, barbeque sauce, or delicious queso Rotel dip. 

Perfect for a quick holiday breakfast with scrambled eggs and fruit.

HOW TO STORE

Freeze ahead of time cooked or uncooked

Pre-assembled and uncooked: Follow Steps 1 through 5 then freeze on a flat sheet for about 45 minutes. Transfer to a Ziplock freezer bag and store for up to 2 months. Unthaw for about 30 minutes at room temperature then sprinkle with Everything But the Bagel seasoning. Spray tops with spray oil and then cook as directed above.

Already cooked: Store in a freezer-safe, air-tight container, with parchment paper in between the layers. Heat up in the microwave or thaw out, then warm up in the oven on low heat.

  • 1 Pilsbury Pie Crust
  • 1/2 wedge Spreadable Cheese…Laughing Cow Cheese Wedge
  • 1 beaten egg brush on tops
  • Everything But the Bagel Seasoning – generous sprinkles

Instructions
