DRIP BEEF VS. ITALIAN BEEF

In Oklahoma, we consider Drip Beef a game day staple. Made with a tender roast, slow-cooked with onions, onion soup mix, and some fresh woody herbs thrown in.

In other parts of the country, almost the same exact sandwich is called Italian Beef. Italian Beef is known to have green peppers, onions, maybe some oregano. In our family, we prefer a no pepper sauce but maybe a pickle or two on the side.

STEP TO A PERFECT DRIP BEEF

  • Start out with a good quality chuck or arm roast. I prefer chuck or arm roast over brisket.
  • Slice a whole large onion.
  • Peel, smash whole garlic cloves. Click on this link for an easy garlic peeling method.
  • Salt and pepper both sides of the meat, I use Lawry’s season salt.
  • Place in crockpot insert pan with a couple of tablespoons of oil, and sear on both sides until the meat is kind of crusty and golden brown. Note: If you don’t have a slow cooker that has a sear function or one with an insert pan so you can sear it on the stove in a cast-iron skillet. At the bottom of this post👇 I’ve suggested a few brands that I’ve either used or want to use:)
  • After you sear the meat on all sides, place the cut-up onion and garlic underneath the meat acting as a platform.

6 HOURS OF YUMMY TORTURE

  • Throw in fresh whole thyme and rosemary sprigs on the open sides. 
  • Open the single package of Lipton’s Onion Soup mix and sprinkle on top of the meat.
  • Pour about a cup of beef broth (you can use chicken broth if you don’t have any beef broth) around the meat; avoiding the top of the roast.
  • Cover and cook on high for six hours in the crock pot…try not to open the lid. I’d highly recommend you exit the premises until you’re ready to chow; It smells THAT good!!!

DRIP BEEF TOPPING AND ADDINS

In addition to the savory onions, garlic, and lots of fresh backyard herbs this goodness is cooked in, try adding sliced fresh jalapenos and red bell peppers to spice it up. Note: Just don’t add them in the broth to cook. The au jus will not turn out tasting like onion…it will taste like pepper au jus…blah!

Add cheese on top of the meat to make it like a Philly Beef Sandwich. Personally I prefer a big scoop of real mayo and Dijon mustard mixed together on the bread, YUM!!

Marinated roasted red peppers, pepperoncini peppers, or even marinated artichoke hearts would be delish! And don’t forget the pickle!!

The DUNK in this yummy, oniony, herby homemade au jus broth is a day maker! I promise, every bite gets better. You won’t want to stop until you’ve reached “Couch Level”. Then you know you’re done😉

Ingredients

  • 1 3.5# Chuck or Arm Roast or size to amount you need
  • 1 tbsp olive oil or more to coat bottom of pan
  • salt & pepper generously salt and pepper both sides of meat
  • 5 cloves fresh garlic, smashed and chopped or more to taste
  • 1 large onion, sliced
  • 4 fresh rosemary sprigs, 4-5" long
  • 8 fresh thyme sprigs, 2" long
  • 1 package Lipton Dry Onion Soup Mix
  • 3/4 cup beef broth

Instructions

  • Salt and pepper both sides of roast.
  • Heat up olive oil and place meat in pan. Sear until dark brown on one side and turn over and do the same to the other side.
  • With a fork lift meat and place onion slices and garlic underneath meat.
  • Add rosemary and thyme to sides.
  • Sprinkle Lipton Dry Onion Soup mix on top of roast.
  • Pour beef broth on inside of pan but not getting top of meat wet.
  • Cover with crock pot lid and turn on high for 5 to 6 hours.
  • It's done when it falls apart with a fork. Shred in juice.
  • Butter bread and toast in the oven, bread should be crusty.
  • Smear one side of bread with Dijon mustard and mayo.
  • Scoop shredded meat with a slotted spoon, draining as much liquid out of the spoonful of meat as possible.
  • Use ladle and collect broth for individual dipping bowls.
  • Dig in and Enjoy!!!

  • Gruyere (“groo-yair”)cheese (or any semi hard cheese you choose)
  • parmesan cheese

  • french bread loaf or baguette cut in two, sliced horizontally, and insides scooped

STEP BY STEP INSTRUCTIONS

  1. Preheat oven to 400°
  2. In a medium bowl add mayo, cream cheese, garlic powder, sea salt, lemon juice, and smashed, chopped fresh garlic to a bowl and mix with a rubber spatula (metal spoon or fork will work just fine too).
  3. Chop all artichokes, onion, olives, and jalapeno then add to the mayo and cream cheese mixture.
  4. Cut baguette in half, then cut horizontally and lay on a baking sheet. Scoop out the soft insides, spread cream cheese mixture out evenly between the four slices, and smear mixture on top. Grate parmesan cheese on top and then sprinkle with cayenne pepper.
  5. Bake for 20-25 mins or until golden brown and bubbly

Notes

Substitutions and Additions:
Replace the gruyere cheese with Monterey Jack Cheese or a combo of white cheese. If you replace it with yellow cheddar cheese then maybe don’t use as much because it might come out too greasy.
Add jarred roasted red pepper, green chilis, green onions, water chestnuts or sliced mushrooms.
Omit the olives and add a few capers for a salty, savory taste.
Replace the mayo with yogurt if you’re not a mayo fan.

BEST NO-BAKE BANANA PUDDING

This all American classic No-Bake Banana Pudding dessert is a combination of the best banana pudding recipes I’ve made over the years. It incorporates the ease of instant pudding and store bought cool whip with the rich creaminess of cream cheese and real whipped cream.

All this goodness is topped with beautiful, buttery, delicious Pepperidge Farm Cheeseman Cookies and an extra layer of yum tucked inside. Yep…it’s good and Yep…worth every single calorie!

Good Banana Pudding is by far one of my top 3 favorite desserts to make. Great Banana Pudding is no doubt my number one favorite dessert! This recipe is beyond great!

The amount of fluff the ingredients creates is enough to fill one very large dish…like bigger than this 9″x13″ by almost double. That’s why I call it an almost doubled recipe.

You can easily make this for a larger party or split it into two dishes and have enough to give as a gift as we did here. Our friend Xena had her wisdom teeth out and the jumbo pan was her treat…I’m hoping she shared!

HOW DO YOU MAKE THE BEST EVER BANANA PUDDING?

This easy no-bake recipe can be done a day ahead and placed in the fridge. In fact, it’s probably better done a day in advance, all the flavors would really meld together.

If you do make it ahead of time, I would recommend using the sprinkled lemon juice on the bananas. Brown bananas are still good just not that appealing.

STEP BY STEP FOR THE EASIEST BANANA PUDDING

STEP ONE… Mix together instant pudding mix and milk with a hand mixer. When done and let stand for a couple of minutes, add in softened cream cheese, extract, and whipping cream and mix again until thick and creamy. Almost like whipped whipping cream. This might take about 5 minutes.

Fold in thawed Cool Whip into pudding mixture.

STEP TWO… Toast sliced almonds in a nonstick skillet until just tan. Let cool. Mix in a few crushed cookies.

STEP THREE… LAYERS… First layer of cookies goes on the bottom of the pan, then sliced bananas, sprinkle with a little lemon juice if desired, then sprinkle nutmeg on top of bananas.

Spread about 1/3 of pudding mixture on top of bananas. Smooth out with a rubber spatula.

Then sprinkle toasted almond mixture on top of the pudding. Note: This step is truly optional but it adds a little nutty crunch in the middle of a delicious bite.

STEP FOUR… Repeat step three.

STEP FIVE… End with a final layer and then cover with a layer of cookies.

STEP SIX… Cover with plastic wrap and place in the freezer for a couple of hours or the refrigerator for about 4 hours.

EXTRA TIPS

Banana Pudding is one of those dishes where you can get creative. Here are a few extra ideas for making ordinary Banana Pudding into an exceptional, memory making event!

TIP: USE PLENTY OF BANANAS (4 or 5)!

  • Add toasted coconut to the almond cookie mixture
  • Try adding a layer of marshmallows!
  • Beat in some marshmallow fluff to the whipped ingredients
  • Add blueberries or white chocolate chips

Pro Notes:

If you can’t find the Chessman Pepperidge Farm Cookies then use the traditional Vanilla Wafers. You could also use graham crackers or maybe a thin sugar cookie. A chocolate cookie…maybe??

If you don’t want to use whipping cream then by all means leave it out! Use extra cool whip instead or a double batch of instant pudding.

This Chocolate Orange Pecan Pie is the Christmas dessert you didn’t know you were missing! Oh my is it good!!! This pie is a magical blend of buttery, golden, decedent filling with a hint of orange and rich dark chocolate morsels all surrounding fresh toasted pecans.

It is absolutely perfect for your Thanksgiving or Christmas holiday table and as easy to make as this Southern Pecan Pie but with just 2 more ingredients! The holidays are not complete without this glorious treat.

CHOCOLATE ORANGE PECAN PIE INGREDIENTS

I love to make pie, anykind of pie but I do believe Pecan Pie is my obsolute favorite. I’m not sure it’s my favorite because I’m from Oklahoma and I’ve always had a pecan tree in my backyard or because if it’s Thanksgiving and that’s the go light for the eating season.

QUALITY INGREDIENTS ARE KEY

  • 4 large or 5 medium local farm raised eggs, most stores carry local eggs now days
  • sugar
  • Karo Syrup…I know, I know it’s not all that great for you but it is the holidays!
  • small amount of flour
  • good quality butter
  • vanilla extract…I use Madagascar
  • good quality dark or milk chocolate chips
  • good quality orange liqueur, I used Cointreau 
  • fresh pecans…I use my own pecans from our backyard garden unless it’s the 7th year pecan drought, then I’ll by local
  • pie crust, I use store-bought…it’s easy!

HOW TO MAKE A CHOCOLATE ORANGE PECAN PIE

  • STEP ONE – Easiest way to start is with an unbaked pie shell or one in a box that you place in your own pie plate or a 10″ cast iron skillet.
  • STEP TWO – Beat your eggs first in a mixing bowl.
  • STEP THREE – Add sugar and flour gradually while beating the eggs. Make sure big lumps from the flour are gone.
  • STEP FOUR – Add Karo Syrup (light or dark or a combo of both), melted butter, vanilla, and orange liqueur such as Cointreau. Mix well.
  • STEP FIVE – Place pecan pieces and chocolate chips in an unbaked pie shell. Pour egg and sugar mixture over pecans.
  • STEP SIX – Design pecan halves on top of filling mixture. Note: most pecan pie recipes I’ve seen skip this step…but this separates a good pecan pie from a great one!! Extra steps make a difference!
  • STEP SEVEN – Bake at 350 for 45 mins or until filling is set (no jiggle).
  • STEP EIGHT – Let it rest and cool before serving (a couple of hours) or cover and put in the refrigerator.

CAN YOU FREEZE PECAN PIE?

Yes and no. I’ve only had one Pecan Pie that I know of that had been frozen a month before Thanksgiving, my Aunt Jill’s (again another famous cook). She brought it one year for Thanksgiving, still in all the freezer wrap but thawed out. It tasted good but the whole crust was stuck to the pan. It made a great ice cream topping!

  • Vanilla Bean Ice Cream is my first choice. Whole Foods own brand of 356 everyday is really good. They have a 2 hour delivery window…how sweet for the holidays!
  • Real Whipped Cream…maybe with a little bourbon and powdered sugar whipped in.

PECAN PIE VARIATIONS

Chocolate Pecan Pie is very popular and easily adapted from my basic Southern Pecan Pie Recipe. 1 cup of chocolate chips in the bottom with the pecan pieces and you’ve got a perfect Chocolate Pecan Pie!

Chocolate Bourbon Pecan Pie is truly a special pie. I made one last year and it was a HIT and again easily adapted from my basic pecan pie. 1 cup of chocolate chips in the bottom with the pecan pieces and 1 jigger or 1/4 cup of your favorite Bourbon and you’ve got a perfect Chocolate Bourbon Pecan Pie!

  • If your roasting your pecans then do this step first. Roasting is easy: place pecan halves on a cookie sheet sprayed with spray oil. Bake for about 10mins at 300°. Keep an eye on these they could burn depending on the moisture in the nuts.
  • Beat eggs well. Add sugar and flour gradually to eggs while stirring.
  • Add Karo syrup, melted butter (45sec in microwave, separate bowl), vanilla and orange liqueur. Mix well.
  • Place 1.5 cups of roasted pecans pieces and chocolate chips on bottom of unbaked pie crust.
  • Pour egg mixture over nuts and chips. Decorate top of pie with remaining pecan halves.
  • Bake 45mins at 350° or until filling is set.

Whether you’re southern or not, this easy family favorite Pecan Pie must be included on your next Thanksgiving, Friendsgiving, and or Christmas holiday dessert table; that is if you want your guests coming back next year! And if you really want to impress your guests try this decadent Chocolate Orange Pecan Pie!

This easy pecan pie recipe has been adapted from a well-loved Aunt. Aunt Margie is famous in our family and is considered one of the greatest cooks in East Texas. Let’s just forget the fact she named it “Pete’s Pecan Pie” after my brother and get right down to business.

EASY AND DELICIOUS SOUTHERN PIE INGREDIENTS

What you’ll need first is high quality ingredients:

  • 4 large or 5 medium eggs
  • sugar
  • Karo Syrup…I know, I know it’s not all that great for you but it is the holidays!
  • small amount of flour
  • good quality butter
  • vanilla extract…I use Madagascar
  • roasted fresh pecans…I use my own pecans from our backyard garden (If it’s the 7th year pecan drought, I’ll buy local)
  • pie crust

HOW TO MAKE AND BAKE

  1. STEP 1 – Easiest way to start is with a unbaked pie shell or one in a box that you place in your own pie plate or a 10″ cast iron skillet.
  2. STEP 2 –Beat your eggs first in a mixing bowl.
  3. STEP 3 –Add sugar and flour gradually while your beating the eggs. Make sure big lumps from flour are gone.
  4. STEP 4 –Add Karo Syrup (light or dark or a combo of both), melted butter, vanilla, and cinnamon. Mix well.
  5. STEP 5 –Place pecan pieces in an unbaked pie shell. Pour egg and sugar mixture over pecans.
  6. STEP 6 –Design pecan halves on top of the filling mixture. Note: most pecan pie recipes I’ve seen skip this step…but this separates a good pecan pie from a great one!! Extra steps make a difference!
  7. STEP 7 –Bake at 350 for 45 mins or until filling is set (no jiggle).
  8. STEP 8 –Let it rest and cool before serving (a couple of hours) or cover and put in the refrigerator.

It’s not just for Christmas or Thanksgiving!

Southern pecan pie isn’t just for the winter holidays. Serve this at barbecues, church gatherings, birthday parties, etc.

You can also use this wonderful filling and make it into mini pies using a cupcake pan. Just cut the pie dough into smaller circles with a biscuit cutter, top or a drinking glass or a top of a mason jar…anything that is circular and is the basic diameter of a cupcake tin.

Is it Freezable?

Yes and no. I’ve only had one Pecan Pie that I know of that had been frozen a month before Thanksgiving, my Aunt Jill’s (again another famous cook). She brought it one year, still in all the freezer wrap but thawed out. It tasted good but the whole crust was stuck to the pan. It made a great ice cream topping!

TOPPINGS!

  • Vanilla Bean Ice Cream is my first choice. Whole Foods own brand of 356 everyday is really good. They have a 2 hour delivery window…how sweet for the holidays!
  • Real Whipped Cream…maybe with a little bourbon and powdered sugar whipped in.
  • Real Dairy Whipped Cream in a can is always a hit with the kids and super fast and convenient. Again another Whole Food 365 item for the holidays!

Chocolate Bourbon Pecan Pie is truly a special pie. I made one last year and it was a HIT and again easily adapted from my basic pecan pie. 1 cup of chocolate chips in the bottom with the pecan pieces and 1 jigger of your favorite Bourbon and you’ve got a perfect Chocolate Bourbon Pecan Pie!
