Red, White & Blueberry Cookies

Cherries, white chocolate chips, almonds and fresh summer blueberries all combined in a sweet, buttery, flaky super sugar cookie. Perfect for summer get togethers.

Ingredients
  

Red, White, and Blue Sugar Cookie Recipe

  • 1 cup butter softened
  • 1 cup canola or vegetable oil
  • 1 cup granulated sugar
  • 1 cup confectioner's sugar
  • 2 large eggs
  • 2 tsp almond extract
  • 2 tsp cherry extract used cherry juice instead
  • 4.5 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp cream of tartar optional
  • 1 cup chopped, drained Maraschino Cherries reserve cherry juice
  • 1 cup fresh blueberries
  • 1/4 cup sugar
  • 1 cup white chocolate chips

Instructions
 

  • Mix butter, oil, both sugars, eggs and extracts together in a large bowl. Beat until combined.
  • Whisk flour, baking soda, and cream of tartar in a separate bowl until incorporated. Add to butter mixture and mix until all ingredients are blended. Do not over blend.
  • Mix blueberries with 1/4 cup sugar. Add cherries, sugared blueberries, white chocolate chips and mix into basic cookie dough until just stirred in. Do not over mix.
  • Spoon out on cookie sheets lined with parchment paper. You can make them any size you want. 
  • Cook on 375 for just about 10 minutes or until edges are just turning golden and crispy. Should be soft in the middle.
  • Cool on wire racks. When cool add glaze and almond slices if desired.

Cherry Almond Glaze

  • Whisk 2 cups confectioners sugar with 1/3 of reserved cherry juice, 1 tsp almond extract and a splash of water or until thin enough to drizzle.
  • Add sliced almonds on top.
