Red, White, and Blue Sugar Cookie Recipe
1cupbutter softened
1cupcanola or vegetable oil
1cupgranulated sugar
1cupconfectioner's sugar
2largeeggs
2tspalmond extract
2tspcherry extractused cherry juice instead
4.5cupsall purpose flour
1tspbaking soda
1tspcream of tartaroptional
1 cup chopped, drained Maraschino Cherries reserve cherry juice
1 cupfresh blueberries
1/4cupsugar
1cupwhite chocolate chips
Instructions
Mix butter, oil, both sugars, eggs and extracts together in a large bowl. Beat until combined.
Whisk flour, baking soda, and cream of tartar in a separate bowl until incorporated. Add to butter mixture and mix until all ingredients are blended. Do not over blend.
Mix blueberries with 1/4 cup sugar. Add cherries, sugared blueberries, white chocolate chips and mix into basic cookie dough until just stirred in. Do not over mix.
Spoon out on cookie sheets lined with parchment paper. You can make them any size you want.
Cook on 375 for just about 10 minutes or until edges are just turning golden and crispy. Should be soft in the middle.
Cool on wire racks. When cool add glaze and almond slices if desired.
Cherry Almond Glaze
Whisk 2 cups confectioners sugar with 1/3 of reserved cherry juice, 1 tsp almond extract and a splash of water or until thin enough to drizzle.
