Ingredients

  • 16 oz Fettucini Pasta...or any kind of pasta, gluten-free
  • 10 oz Green Peas - English Peas - Spring Peas,
  • 1 Jalapeno (s) chopped
  • 1 cup Red Onion, finely chopped or 1/2 small red onion
  • 1/2 stick Butter, Olive or Avacado Oil 1/3 cup if using oil
  • 1 tbsp minced fresh and/or garlic paste
  • 1 tbsp Curry Spice to taste, I would add a little more
  • 1 cup Parmesan Cheese, grated
  • 1/3 cup Fresh Dill or dried fresh snipped or chopped (if using dried use 2 tbsp
  • Sea Salt & Cracked Pepper to taste

Instructions

  • Boil the pasta according to package directions.Add curry and garlic to the bowl and mix it up.Drain the pasta and "wash" the starch off of it with warm water. Let it drain for about 5 minutes. Hopefully, it will still be warm.Put the drained pasta in a big mixing bowl and add all the other ingredients. Toss really well to incorporate the butter paste and all the veggies into the pasta.Salt and pepper to taste then
  • While the pasta is cooking cut up all your fresh ingredients.
  • If your using butter, melt it just a little...like 15 seconds at a time...just until it's soft.
  • Add curry and garlic to the butter bowl and mix it up with a fork.
  • Drain the pasta and "wash" the starch off of it with warm water. Let it drain for about 5 minutes.
  • Place the warm, drained pasta in a big mixing bowl, add the fresh ingredients minus half the dill and the curry butter. Toss really well to coat the pasta and veggies with the curry butter.
  • Sprinkle the remaining dill on the mixed pasta along with the salt and pepper and slightly mix in again.
  • Sprinkle on the grated Parmesan Cheese. Serve slightly warm or chill in the fridge until ready to eat. It gets better the longer it sits:)
