Easy Curry Pasta with Fresh Dill and Peas

Ingredients
  

  • 16 oz Fettucini Pasta...or any kind of pasta, gluten-free
  • 10 oz Green Peas - English Peas - Spring Peas,
  • 1 cup Red Onion, finely chopped or 1/2 small red onion
  • 1/2 stick Butter, Olive oil or Coconut Oil 1/3 cup if using oil
  • 1 tbsp crushed fresh garlic or garlic paste
  • 1 tbsp Yellow Curry Seasoning to taste, I would add a little more
  • 1 tsp garlic salt
  • 1 cup Parmesan Cheese, grated
  • 1/3 cup Fresh Dill or dried fresh snipped or chopped (if using dried use 2 tbsp
  • Sea Salt & Cracked Pepper to taste

Instructions
 

  • Step One: If using fresh peas, bring salted water to a boil and add peas. Boil for about 5 minutes or until peas are bright green and semi soft. If using frozen peas, place in a colander and rinse. Let sit for about 30 minutes.

  • Step Two: Bring a large pot of salted water to a boil. Break the pasta in half and boil according to package directions time. Al dente tender is best.
    16 oz Fettucini Pasta...or any kind of pasta, gluten-free
  • Step Three: While the pasta is boiling, cut up the onions and crush the garlic. 
    1 cup Red Onion, finely chopped, 1 tbsp crushed fresh garlic or garlic paste
  • Step Four: Place butter in a medium saucepan and melt over medium heat for about 2-3 minutes or melted.  Add curry and garlic to the saucepan and mix. Keep warm.
    1/2 stick Butter, Olive oil or Coconut Oil, 1 tbsp Yellow Curry Seasoning
  • Step Five: Drain the pasta and "wash" the starch off with warm water. Let drain for about 5 minutes..
  • Step Six: Transfers the al dente pasta to a large bowl and pour curry butter sauce on top of the cooked pasta, toss well. Add the peas, chopped onions, and fresh dill. Toss again. Add the shredded parmesan and toss again until everything is well incorporated.
    1 tsp garlic salt, 1 cup Parmesan Cheese, grated, 1/3 cup Fresh Dill or dried, Sea Salt & Cracked Pepper
  • Serve warm or chill in the fridge until ready to eat.
