These feisty snack crackers are a five minute, do ahead, easy and fast put together recipe. Serve these on top of your favorite Taco salad, use them instead of tortilla chips with this easy crockpot Mexican Chicken Soup.

EASY BUDGET FRIENDLY INGREDIENTS

  • mini cheese crackers (I used Cheez-Its)
  • spicy ranch dressing dry mix, (1 package for light spice, 2 for extra bold)
  • red chili pepper flakes
  • garlic powder
  • canola oil (or vegetable oil)

QUICK HOW TO STEPS

  • STEP THREE- every hour or so gently flip the bag or container
  • STEP FOUR – “marinate” crackers for at least 6 hours or overnight
  • STEP FIVE – place on a sheet baking pan with a cut-up brown paper sack liner

  • STEP SIX – spread crackers on the paper sack liner in a thin layer and let them sit for about an hour (if the paper liner becomes to oil saturated, replace it with the other half of the cut-up sack before cooking
  • STEP SEVEN – heat oven to 275 degrees, cook crackers for at least 30 minutes or until crispy and toasty. (stir at 10 minutes and then at 20 minutes -(cook with paper bag liner…it will not burn)
  • STEP EIGHT – cool for about 10 minutes, serve them up and ENJOY!

If you’re not into mini crackers you could also use:

  • pretzels
  • regular size saltine crackers, 4 sleeves fit perfectly in the gallon ziplock bag
  • oyster crackers
  • mini wheat crackers
  • chickpeas…these two recipes are super good Airfryer or oven methods…Crunchy Curry Chickpeas and Spicy Jalapeno Chickpeas
  • gluten-free crackers or pretzels

HELPFUL HINTS

Instead of baking them in the oven try using your Air Fryer for a single-serve portion!!! Fill the bottom of the basket with the feisty crackers and “air fry” for 3-4 minutes at 275-300 degrees. So Good!!

Ingredients

  • 1 box cheese snack crackers Cheez-its
  • 2 tbsp spicy ranch salad dressing seasoning 1 package for spicy, 2 for extra bold spice
  • 1 tbsp red chili pepper flakes more or less to taste
  • 1 tbsp garlic powder
  • 1/2 cup canola oil, vegetable, or olive oil

Instructions

  • STEP ONE – mix seasonings and oil together, make sure all the seasonings are mixed and not clumpy
  • STEP TWO – put cheese crackers in a gallon ziplock bag and pour oil-seasoning mix over crackers, gently mix until crackers are evenly covered
  • STEP THREE – every hour or so gently flip the bag or container
  • STEP FIVE – "marinate" the spicy crackers 6 hours or overnight
  • STEP SIX – place on a sheet pan with brown paper bag sheet, let "airdry and drain for about 30 minutes
  • STEP SEVEN – replace brown paper liner with the other half of the bag and place crackers on top. Cook for 30 minutes at 275° gently stirring crackers after 10 minutes and then again at 20 minutes.
  • STEP EIGHT – cool for about 10 minutes, serve them up and ENJOY!

Notes

Yes…it’s easier buying already made store-bought pumpkin pie spice but take it from experience…

  • Your own homemade version is far better than store-bought.
  • One small jar of the store-bought stuff might last 3 pumpkin recipes, 5 pumpkin pie protein shakes, or 10 slices of pumpkin pie cinnamon toasts…depends on who’s at home, LOL.
  • Buying the individual spices and whipping up your own homemade pumpkin pie spice saves money.
  • Having more fall spices on hand might encourage some fun experimenting with this cozy combination. Try it on baked chicken and in Butternut Squash Soup; it is delish in both!

INGREDIENT SUBSTITUTIONS

Cinnamon, ginger, and nutmeg are the main ingredients that can’t be substituted. But you can replace Allspice with cloves and cardamom.

You can also add a little chili powder and a tiny bit of sugar for allspice and/or cloves and cardamom. If you notice most pumpkin pie spice recipes include cloves. Some people…like a certain person in my family…are not clove fans.

But now, if you’re on the Purple Plan, Sweet Potatoes are 0 points!!! That means this whole dish would have 2 points! That’s it!! It’s also extremely Whole 30 friendly and of course Vegan as well!

Benefits of Using An Air Fyer

There are so many great reasons to invest in an Air Fryer. I know…its one more appliance on your counter but it will quickly become one of the most used appliances you will own…I promise!

Here are a few pro reasons why an Air Fryer will make your life easier:

  • You use a lot less oil! In fact, just a spray or two of spray oil will be enough for most recipes.
  • Since you use a lot less oil with the Air Fryer the calorie and fat content will be greatly reduced. In fact, in some “diet plans” like Weight Watchers the point count will go from 3 or 4 to zero! No joke people!
  • For me, the Air Fryer takes less time to cook most recipes. It’s much smaller than a regular oven so the heat is more concentrated and intense.
  • If you’re like me I dread using my oven in the summer, just thinking about it makes me hot! With the Air Fryer there just isn’t any residual heat. It heats up fast and cools faster!!
  • If I was single I think I would use the Air Fryer 90% of the time.
  • If you have kids…it is a must. Frozen anything snacks can be made faster, crispier, healthier, and easier than using the oven! Seriously!!

SWEET POTATO HASH INGREDIENTS

This recipe uses a few fresh ingredients and comes out savory and satisfying!

  • Sweet Potatoes and Yukon Gold Potatoes… I used both kinds in this hash recipe. Why? because I love any kind of potato and I had them on my counter. Plus the variations in the colors and flavors are so beautiful together.
  • Onion… I used sweet yellow onions in the dish. I love onions. I think if I had a red onion in the refrigerator already cut I would have used it too.
  • Jalapenos and Garlic… I love jalapenos and garlic and putting them together with potatoes and onions is comfort heaven! Plus all of these ingredients crisp up so nicely.
  • Rosemary and Thyme… I use these herbs in so many of my dishes. They elevate most recipes from average to awesome. Note: these herbs can easily be grown in your BackYard Garden or in a nice patio pot year-round.
  • Seasoning… Garlic Salt or regular salt, pepper, Cajun Seasonings (optional). These spices make life a little bit better! 😁

HOW DO YOU MAKE SWEET POTATO HASH

  1. Chop, cut, and dice all your veggies into the desired size. Place in a bowl. Note: Larger pieces take longer to cook.
  2. Drizzle about 2 tsp of oil on top of veggies and mix.
  3. Season with spices and mix again.
  4. Place in Air Fryer basket and bake at 390 degrees for 10 minutes.
  5. Take out and add Rosemary and Thyme. Shake basket and cook for another 6-8 minutes or until done and crispy.
  6. Place in individual bowls and serve. Yum!!!

SWEET POTATO HASH TOPPERS

The great thing about making something so simple and delicious is it is easy, easy, easy to bump it up a knotch. Below are a few simple additions to make good hash great!

  • Add a fried egg as a topper and you have something wonderful.
  • Mix up with leftovers. Savory Drip Beef leftovers would make a wonderful weekend meal.
  • Add some canned salmon, tuna, or chicken to the Air Fryer half way through. You will be full and satisfied all day long!
  • Cook some bacon, turkey bacon or sausage and incorporate into the cooked hash.
  • Use other veggies like celery, bell peppers, cabbage or brussel sprouts in addition to jalapenos and onions.
  • And last but not least…shredded Corned Beef for the ultimate in feast eating..with an egg on top, of course!

Pinwheel appetizers are so easy and quick to put together. The best part, these scrumptious bites can be made a couple of days ahead for maximum flavor and softness.

Step 2: Once the cheese is soft, add the chopped veggies, garlic paste, lemon juice, and Everything Bagel Seasoning. Mash everything with a fork until just incorporated making a spread.

Step 3: Layout a tortilla, smear with cream cheese mixture, layout a few spinach leaves, and top with a few salmon lox slices. Sprinkle with Everything Seasoning and snip some extra dill on top.

CORNBREAD AND FRIENDS

Delicious, golden, crunchy, soft, buttery cornbread is always a welcome food friend to a comforting meal like Ham and Beans or Southern Chicken Shrimp Sausage Gumbo or even a big bowl of spicy Mexican Chicken Soup. It’s really yums with warm honey and butter, strawberry jam and butter, or just plain butter! Is your mouth watering yet?

HOW TO MAKE EASY CAST IRON CORNBREAD

3 step How to make cornbread collage with brief instructions

Making this easy skillet cornbread takes about 5 minutes to put together. The hardest part is remembering to preheat the oven to 400.

Step 1: Preheat the oven to 400 degrees. Place 1/2 stick of butter in the bottom of the cast iron skillet and place skillet into the oven. Let the skillet heat up for about 5 or 10 minutes. The longer time will result in more or less “brown butter” which I really like. It has a nutty rich taste, Yum!

Step 2: Place the Jiffy Cornbread Mix, cheddar cheese, corn, 1 egg or 2 if you want it less crumbly, and onion powder into a mixing bowl. Drizzle the buttermilk over the top and mix (about 25-30 strokes) until just incorporated.

Step 3: Pour the cornbread mixture into the hot skillet. The butter will tend to sit on top of the mixture…which is good! You want that:) Place back in the oven and bake for 20-25 minutes. The cornbread should be golden brown on top with darker golden brown crispy edges around the rim.

Let sit for about 15 minutes before you cut into wedges or squares. Yum!

Note: You can also use a glass baking dish like a pie pan to melt the butter beforehand…just don’t let it get so hot. You can put the dish and butter in while the oven is preheating.

  • Corn Cakes…kinda like pancakes…would be so yummy with a fried egg on top. You would make up the recipe below and fry them on top of the stove in a cast iron skillet…just like a pancake. OMG, I might need to do this as well!
  • Leftover cornbread…if there is any…is really delish sliced in half, with butter smeared on it, then toasted in the oven. Try sauteed mushrooms on top! Ooh, La, La is it tasty!

  • 1/3 cup buttermilk or regular milk
  • 1 cup cheddar cheese or Monterey Jack (pepper)
  • 1 cup sweet corn canned
  • 2 tsp onion powder
  • 1/2 stick butter

Instructions

  • Preheat the oven to 400 degrees. Place 1/2 stick of butter in the bottom of the cast iron skillet and place skillet into the oven. Let the skillet heat up for about 5 or 10 minutes. The longer time will result in more or less "brown butter" which I really like. It has a nuttier richer taste.
  • Place the Jiffy Cornbread Mix, cheddar cheese, corn, 1 egg or 2 if you want it less crumbly, and onion powder into a mixing bowl. Drizzle the buttermilk over the top and mix (about 25-30 strokes) until just incorporated.
  • Pour the cornbread mixture into the hot skillet. The butter will tend to sit on top of the mixture…which is good! Place back in the oven and bake for 20-25 minutes. The cornbread should be golden brown on top with darker golden brown crispy edges around the rim.
  • Let set for about 15 minutes before you cut into wedges or squares. Enjoy!
