Quick and Easy Spinach Souffle Mini Bites is a 3 ingredient appetizer full of golden brown, creamy goodness that looks and tastes like you hired a professional to make. What makes this recipe even better, it’s perfect for a last-minute appetizer. Just pop it in the oven and bake at the last minute.

These mini spinach souffle bites are delicious for a Christmas party, New Year’s Eve nibble, Mother’s Day Brunch, or a sweet baby shower. They’d make a nice side dish for a special meal too.

WHY YOU’LL LOVE THIS QUICK AND EASY SPINACH SOUFFLE MINI BITE APPETIZER

  • Spinach souffle cups have just three ready-made main ingredients plus a sprinkle of cayenne or red pepper flakes on top. That’s it!
  • It takes a couple of minutes to put together. Plus, they can be made a day ahead of your party and popped into the oven for a fast and easy appetizer minutes before party time.
  • The best part about this great appetizer is everyone loves the savory flavor and crunchy texture. Your guests will think you spent all day cooking.

WHAT YOU’LL NEED TO MAKE MINI SPINACH SOUFFLE BITES 

Ingredients

  • 2 Stouffer’s Spinach Soufflé. You’ll find them in the freezer section of the grocery store.
  • Ready-made mini phyllo cups. They’re either in the freezer section or on an endcap during the holiday season.
  • Parmesan cheese, Monterey jack cheese, Gruyere Cheese, Smoky Guoda, Cheddar, Swiss Cheese…your choice!
  • Sprinkle of cayenne or red pepper flakes.

HOW TO MAKE MINI SPINACH BITES

  • STEP ONE  Microwave the two frozen trays of Stouffer’s Spinach Souffle. (follow the back of the box and follow the first part of the directions)
  • STEP TWO – While the souffles are defrosting in the microwave, spray 3-4 mini muffin pans with cooking spray.  Place individual phyllo cups in each mini muffin pan. Pro Note: for easier handling place mini muffin pans on a large baking sheet. 
  • STEP THREE – When the souffles are defrosted, remove the film, and scoop both souffles into a medium bowl. Stir in 1 cup of grated cheese and mix.
  • STEP FOUR – Using a tablespoon or large soup spoon, scoop the souffle mixture into each individual phyllo cup. Sprinkle with more grated cheese, then sprinkle paprika or red pepper flakes on top.
  • STEP FIVE – Bake at 350 degrees for about 25-30 minutes or until the spinach mixture is firm and the cheese is melted. Pro Note: cook time may vary depending on your oven temperature.
  • STEP SIX – Serve immediately. Enjoy!

​HOW TO STORE AND COOK AHEAD OF TIME

  • Make the day before, cover with plastic wrap and refrigerate. Let the mini souffle bites come to room temperature, then pop in the oven following the baking instructions in Step 5.
  • ​Bake a couple of weeks in advance and freeze in an airtight container. When party time comes, microwave on 50% power until they are heated through. Pro Note: microwave cooking times will vary.

RECIPE OPTIONS

  • Not in the mood for spinach? Next time try store-bought artichoke dip instead of spinach souffle.
  • Stouffer’s Corn Souffle instead of the spinach would be really good. Top it with grated cheddar cheese and a slice of jalapeno!
  • Homemade jalapeno pimento cheese would be an easy no-bake phyllo cup filler…so easy as an appetizer for a barbeque.
  • Another fast and easy appetizer would be a spoonful of this light and yummy Chicken Salad…perfect for an afternoon baby or wedding shower. You could even buy storebought to make it less work!
  • If you can’t find mini phyllo cups, try using canned Cresent Rolls, mini pie crust circles, quartered flour tortillas, or rounds of sliced bread. These options will need a little toasting in a muffin pan before you add the filling.
