This Easy Spinach Souffle Mini Bites recipe is a fast, easy and delicious appetizer addition to a Mother’s Day Brunch, wedding shower get together, or holiday party table. Ready-made mini phyllo cups, Stouffer’s famous frozen Spinach Soufflé, grated parmesan cheese, and a sprinkle of paprika on top, cook for 20 mins and it’s done. What could be easier for a last-minute, colorful addition to any special occasion?

EASY SPINACH SOUFFLE BITES INGREDIENTS

  • Stouffer’s famous frozen Spinach Soufflé
  • Ready-made mini phyllo cups
  • Cheese, parmesan, gruyere, cheddar, swiss…your choice!
  • A sprinkle of cayenne

EASY SPINACH BITES INSTRUCTIONS

  • STEP ONE Microwave both frozen Spinach Souffle cartons with plastic film intact but with a corner pulled back. Defrost for 5 minutes. (follow the back of the box and follow the first part of the directions)
  • STEP TWO – While the souffle is defrosting in the microwave, spray 3-4 mini muffin tins with spray oil. Place individual phyllo cups in the mini muffin tins.
  • STEP THREE – When souffles are defrosted, remove film and stir 2/3 cup of grated cheese in each carton and stir until just incorporated.
  • STEP FOUR – Using a tablespoon, scoop souffle mixture into each individual phyllo cup. Sprinkle with more grated cheese, then sprinkle paprika on top.
  • STEP FIVE – Bake at 350 degrees for about 25-30 mins or until spinach mixture is firm and cheese is melted.
  • STEP SIX – Serve immediately. Enjoy!

QUICK TIP….Make ahead and refreeze. When ready to cook…let them set out on the counter for about 30 minutes, preheat oven to 350o , cook for 20 mins, sprinkle cheese on top…cook for 10 mins more or until cheese is melted.

INGREDIENT OPTIONS

Not in the mood for spinach? Experimenting with different fillings for phyllo cups can be fun and delicious.

  • Stouffer’s Corn Souffle instead of the spinach would be really good. Top it with grated cheddar cheese and a slice of jalapeno!
  • This pimento cheese recipe would be an easy no-bake phyllo cup filler…so easy for a BBQ starter.
  • Another fast and easy appetizer would be a spoonful of this light and yummy Chicken Salad…perfect for an afternoon baby or wedding shower. You could even buy storebought to make it less work!
  • If you don’t like phyllo cups or can’t find them, try using canned Cresent Rolls, cut out flour tortillas, or squares of sliced bread. These options might need a little toasting in the muffin tins before you add the filling.
