Homemade Curry Cheese Puff Chex Mix is a special twist on Traditional Chex Mix is usually made with Chili Powder.  Golden brown and savory, butter sauce seasoned with curry-cumin spice. Mixed up and slow-roasted in a delicious combination of Goldfish, Cheese puffs, pretzels, Chex cereal, sesame sticks, Cheerios, and peanuts. This Chex mix has an Indian-far East flare and is out-of-this-world delicious.

How To Make Curry Cheese Puffs Chex Mix

Instructions

  • STEP ONE: Heat oven to 215°. Measure all of the dry ingredients and place them in a large bowl or roasting pan. Mix up gently with a large kitchen spoon or your hands.
  • STEP TWO: In a medium saucepan or skillet, melt the butter over low to medium heat. Add the Worcestershire sauce, yellow curry powder, onion powder, garlic powder, cumin powder, and hot sauce. Mix thoroughly while the sauce simmers. 
  • STEP THREE: Pour the curry sauce mixture over the dry mix. Gently stir with a rubber spatula or wooden spoon until everything is evenly coated. Note: This will take about 15 minutes of constant gentle stirring.
  • STEP FOUR:  Place coated mix on large baking sheets (this will probably take 2) or use a large roasting pan with at least 2″ sides. Make sure the mix is spread out evenly in one layer.
  • STEP FIVE: Place in the preheated oven and roast at this low temperature for an hour. Stir every 15 minutes, you should have 3 stirs for each pan. Taste for crispy texture.
  • STEP SIX: Cool on parchment paper, cut-up brown paper sacks, newspaper, or paper towels until the Chex mix has cooled to room temperature.
  • STEP SEVEN: Store in large plastic Ziplock bags or an airtight container. Enjoy!

Optional Ingredient Suggestions

  • Chex Mix is one of those tasty treats that never comes out the same each time and is so easily personalized to fit your taste buds. 
  • If you like a little more garlic flavor…like my husband.. add more garlic powder. The best way is to add it to the butter sauce.
  • If you like it really hot and spicy try adding 2 teaspoons of chili powder, 1 teaspoon of Jalapeno Powder, more hot sauce in the butter sauce, or shake some red pepper flakes directly on the Chex mix when it comes out of the oven.

Alternative Chex Mix Baking Methods

Slow Cooker Method

While oven roasting this popular snack produces the best results, you can also make it in a crockpot.

The crockpot is more hands-free than oven roasting, but it takes more time. The cereal mix gets slightly “steamed” in the crockpot resulting in a less crunchy texture.

Air Fryer Method

The Air Fryer method is a good alternative to oven roasting especially for smaller individual portions. Fill the Air Fryer basket halfway with the Chex mix. Set the temperature to 300o degrees and the time for 10 minutes. In 2-minute intervals, pull the basket out and shack to mix. Resume air frying for 2 minutes, pull the basket out and shake. Repeat this step 2 more times. It comes out crispy and wonderful.

Q: Can you use curry paste instead of curry powder?

A: Yes, but it’s a good idea to start with 1 tablespoon and taste before you add the second tablespoon. 1 tablespoon of Curry paste is stronger in taste than 1 tablespoon of Curry powder.

Q: Why did my homemade Chex mix turn out soggy?

A: Your Chex mix will turn out soggy if you put too much on one baking sheet. The mix should be in a single layer on the pan, that’s why I use two or three. Another reason might be you didn’t cook it long enough. 

Q: How long with homemade Chex mix stay fresh?

A: It should stay crispy and fresh for up to 3 months in large airtight containers. But it won’t last that long with Chex mix lovers in the house.

  • 2 cups thin pretzels
  • 1 cup Cheerios
  • 1 cup Pepperidge Farms Parmesan Flavor
  • 2 cups Rice Chex
  • 1 cup Sesame Stix
  • 2 cups Corn Chex
  • 1.5 cups dry roasted peanuts more or less to taste

  • 2 tsp hot sauce more or less to taste
  • 2 tsp onion powder

  • 1 stick butter (8 tbsp)
