Why You’ll Love Curry Pasta Salad with Fresh Dill

Serve it Warm or Cold: This easy meal is yummy warm or cold. If serving cold, a short pasta like elbow, rigatoni, or shells would be best. Serve it warm and add shrimp or cubed chicken for a quick main meal.

Easy to Customize: Try adding chicken, shrimp, seasoned ground beef, ham, or bacon to this pasta recipe. Or make it vegetarian and add cubed potatoes, carrots, squash, or edamame beans.

Delicious Fusion Dish: Marrying the savory flavor of buttery curry and crisp spring vegetables with Italian pasta come together for a different, savory, subtly sweet dish with a mild spicy kick. It’s different than traditional creamy coconut curry pasta because it doesn’t use a can of full-fat coconut milk or heavy cream of any type.

Frequently Asked Questions – FAQ’S

Q: Can I replace the butter with olive oil?

A: Yes, heat the same amount of olive oil over low heat. Add the curry seasoning and crushed garlic.

Q: Can I use coconut oil instead of butter or olive oil?

A: Yes, coconut oil will add a little nutty sweetness found in Asian dishes.

Q: Can red curry paste or green curry paste be substituted for the yellow curry?

A: Yes, I’d start with half the amount called for in this recipe because both red and green curry have a little more heat than yellow. Add more to your taste.

How to Store this Pasta Dish:

Store leftovers in an airtight container. Heat up by adding a little butter or olive oil while re-heating.
