Easy Crunchy Air Fryer Beef Burritos

Easy crunchy air-fried beef burritos are a really good, fast weekday meal, an easy lunch, or snack that even your kids can put together. Made with leftover taco meat these yummy beef burritos can be ready in about 10 minutes.

Of course, you don’t have to have an Air Fryer to make these. Baking these on a cookie sheet in the oven works but it takes twice as long. Ask for an Air Fryer for the holidays or better yet get your kids one…they can start making you dinner!!

CRUNCHY BURRITO INGREDIENTS

  • tortillas
  • spreadable cheese
  • taco meat or turkey taco meat
  • salsa
  • cheese
  • spinach & cilantro
  • avocado

Optional Ingredients

  • re-fried beans
  • mexican rice
  • rotisserie chicken
  • ground chicken or turkey
  • Spicy Queso (Rotel cheese dip)
  • left over turkey and dressing!!

The options are endless!!! You could even make these with italian ingredients!! Add some pepperoni, salami, a little marinara sauce, and this Italian Queso…OMGosh!! Yumm!!

BURRITO AIR FRYER INGREDIENT ASSEMBLY ORDER

  1. STEP ONE – Low Carb Tortillas (Mama Lupes). By my calculations, these yummy tortillas only have 3 net grams
  2. STEP TWO – spreadable cheese. I use Laughing Cow wedges. They come in lots of flavors and are 1 Weight Watcher points.
  3. STEP THREE – taco meat. In the recipe, I used leftover taco meat. If I was going to make these for dinner the taco meat wouldn’t be leftover. I have also used Turkey Taco Meat and it’s just as delicious!
  4. STEP FOUR – salsa. I used store-bought in the recipe but this Easy Homemade Mexican Salsa would be perfect in this dish.
  5. STEP FIVE – grated cheese. Mild cheddar was used here but pepper jack, sharp cheddar, a combination of both would be yummy.
  6. STEP SIX – spinach & cilantro. This step is where I probably lost most of you all. THIS STEP IS OPTIONAL:)
  7. STEP SEVEN – roll it up like the diagram below. Spray with spray oil and place in the Air Fryer basket. Cook at 390 degrees for about 8 minutes. I would check on it at about 6 minutes, not every Air Fryer cooks the same.
  8. STEP EIGHT – mashed avocado with spicy seasoning and salsa mixed in. Include this inside or top with the avocado outside. THIS STEP IS OPTIONAL AS WELL, lol:)

OVEN-BAKED METHOD

Follow all the instructions above but use your oven. Set it to 425 and cook for 15 minutes.

LOW CARB LOVE!!

These yummy burritos are low carb!!! What? Yes, they are! I use Mama Lupe’s Low Carb Tortillas and they have like 3 net carbs! I like them better than real flour tortillas!

All the cheeses, meat, salsa, and veggies are all low carb. The air fryer adds the quick intense heat making the crunchy, gooey goodness. You will want these burritos every single day!!

SWEET POTATOES ARE WEIGHT WATCHERS AND WHOLE 30 FRIENDLY

As long as I’ve been on Weight Watchers, like my whole life, sweet potatoes or any kind of potato was never Weight Watcher friendly. But now, if you’re on the Purple Plan, Sweet Potatoes are 0 points!!! That means this whole dish would have 2 points! That’s it!! It’s also extremely Whole 30 friendly and of course Vegan as well!

Benefits of Using An Air Fyer

There are so many great reasons to invest in an Air Fryer. I know…its one more appliance on your counter but it will quickly become one of the most used appliances you will own…I promise!

Here are a few pro reasons why an Air Fryer will make your life easier:

  • You use a lot less oil! In fact, just a spray or two of spray oil will be enough for most recipes.
  • Since you use a lot less oil with the Air Fryer the calorie and fat content will be greatly reduced. In fact, in some “diet plans” like Weight Watchers the point count will go from 3 or 4 to zero! No joke people!
  • For me, the Air Fryer takes less time to cook most recipes. It’s much smaller than a regular oven so the heat is more concentrated and intense.
  • If you’re like me I dread using my oven in the summer, just thinking about it makes me hot! With the Air Fryer there just isn’t any residual heat. It heats up fast and cools faster!!
  • If I was single I think I would use the Air Fryer 90% of the time.
  • If you have kids…it is a must. Frozen anything snacks can be made faster, crispier, healthier, and easier than using the oven! Seriously!!

SWEET POTATO HASH INGREDIENTS

This recipe uses a few fresh ingredients and comes out savory and satisfying!

  • Sweet Potatoes and Yukon Gold Potatoes… I used both kinds in this hash recipe. Why? because I love any kind of potato and I had them on my counter. Plus the variations in the colors and flavors are so beautiful together.
  • Onion… I used sweet yellow onions in the dish. I love onions. I think if I had a red onion in the refrigerator already cut I would have used it too.
  • Jalapenos and Garlic… I love jalapenos and garlic and putting them together with potatoes and onions is comfort heaven! Plus all of these ingredients crisp up so nicely.
  • Rosemary and Thyme… I use these herbs in so many of my dishes. They elevate most recipes from average to awesome. Note: these herbs can easily be grown in your BackYard Garden or in a nice patio pot year-round.
  • Seasoning… Garlic Salt or regular salt, pepper, Cajun Seasonings (optional). These spices make life a little bit better! 😁

HOW DO YOU MAKE SWEET POTATO HASH

  1. Chop, cut, and dice all your veggies into the desired size. Place in a bowl. Note: Larger pieces take longer to cook.
  2. Drizzle about 2 tsp of oil on top of veggies and mix.
  3. Season with spices and mix again.
  4. Place in Air Fryer basket and bake at 390 degrees for 10 minutes.
  5. Take out and add Rosemary and Thyme. Shake basket and cook for another 6-8 minutes or until done and crispy.
  6. Place in individual bowls and serve. Yum!!!

SWEET POTATO HASH TOPPERS

The great thing about making something so simple and delicious is it is easy, easy, easy to bump it up a knotch. Below are a few simple additions to make good hash great!

  • Add a fried egg as a topper and you have something wonderful.
  • Mix up with leftovers. Savory Drip Beef leftovers would make a wonderful weekend meal.
  • Add some canned salmon, tuna, or chicken to the Air Fryer half way through. You will be full and satisfied all day long!
  • Cook some bacon, turkey bacon or sausage and incorporate into the cooked hash.
  • Use other veggies like celery, bell peppers, cabbage or brussel sprouts in addition to jalapenos and onions.
  • And last but not least…shredded Corned Beef for the ultimate in feast eating..with an egg on top, of course!

BREAKFAST HASH OPTIONS

Ingredients

  • 6 medium sweet potatoes or Yukon gold potatoes or both

  • 2 jalapenos
  • 3 garlic cloves
  • 2 Rosemary & Thyme Sprigs
  • 2 tsp olive oil
  • spray oil
  • 1 tsp Cajun seasoning

Instructions

  • Chop and dice potatoes to your desired size. Note: Larger pieces will take longer to cook.
  • Chop jalapenos, onion, and garlic.
  • Place all veggies in a medium sized bowl. Drizzle olive oil on top and then spray with spray oil. Mix.
  • Add seasonings and a few more squirts of spray oil.
  • Place above ingredients in the Air Fryer basket and set to 390° for 10 minutes.
  • After it's cooked 10 minutes, add snipped fresh Rosemary and Thyme to veggies, spray with a few more squirts of spray oil and then stir. Return to Air Fryer for another 10 minutes or until desired crispiness is reached.

Easy 3 Ingredient Avocado Toast

I finally enlightened my family to the Avocado Toast movement sweeping the country after having it at a local upscale pub. And let me tell you, they swept their plates…even my meat and potatoes, hot dog and fries, loving husband. Yay, I have a new, healthier plate of goodness to add to my meal catalog!

Since we’re an avocado, guacamole loving fam I’m just sick I didn’t come up with this combo years ago. Who knew that avocados were going to be the newest darling of the many diet crazes popular today.

Easy Avocado and Toast

In the past I’ve put together avocado-bacon-lettuce-tomato sandwiches when I’ve been out of Mayo. But just avocado and toast? That’s too easy…Right? Well apparently not, according to the many blogs I’ve read lately on this simple dish. And rubbing garlic on top of the bread makes it fancy…Genius!! 

Note: I’ve had this perforated baking sheet for years!!! It’s great for toast, frozen pizza, taco shells, warming leftovers! Anything that you want crispy bottoms as well as tops!!

Kicked up Avocado Toast

In order to kick it up a notch (I love Emeril Lagasse), I used some spicy, jalapeno, cheddar bread that our local grocery store makes fresh. It’s pretty yummy and you can buy it in half loaves.

Why toast the bread in the oven instead of the toaster?

  1. Toasting bread in the oven with a little butter smear on it is my favorite way to prepare it. The toast comes out toasted on the outside, soft in the middle and the crust is crunchy and buttery! YUM!
  2. While the bread is toasting, slice up the avocado length wise in the skin. Slicing in the skin makes it easier to scope out and mash on the toast.
  3. Mash the ripe avocado on the crispy toast and sprinkle a little season salt on it. Whah La! Done!!  Print Recipe

Slathered on top of good, whole wheat bread for more fiber, vitamins and minerals and you have one of the healthiest small meals around!

As a matter of fact, this will be our Holiday breakfast item this year instead of breakfast casserole. That way I will know for sure my kids are getting something healthy before the big food feed commences!

  • 1 tsp butter, soften optional

  • Spread soften butter on bread slices.

Pumpkin Pie Protein Shake…yummiyess!!! There is nothing better than a creamy, cold, sweet shake that is loaded with 10,000 calories a gulp, nothing. Except maybe a creamy, cold, sweet, healthy shake that isn’t!

Pumpkin Pie Protein Shake is only approximately 200 calories per shake!

Coming in right at 200 calories, low carbs, and around 30 grams of protein, this breakfast, lunch, or healthy snack has it all.

So easy to freeze!

  • The first step is to freeze the pureed pumpkin. I use organic pumpkin and a silicone mini loaf thingy ?‍♀️ with spray oil. I don’t think regular canned pumpkin is heavily sprayed with pesticides while its growing on the vine, so if you can’t find organic I wouldn’t worry about it.
Frozen pumpkin, premier protein, apple pie spice and elevate smart coffee, ninja blender

Blend up all these ingredients for a frothy, cold, mocha, pumpkin shake!

  • Next step is to blend it all up! The frozen pumpkin, Premier Protein, apple pie spice or pumpkin pie spice, and Elevate Smart Coffee (if you have it)! How easy!! I guess you could call this a two stepper!

The Ninja single serve blender that I’ve had for years and the frozen pumpkin together makes is super frothy and creamy! I love this stuff!

Elevate Coffee and Pumpkin, Yummiyess!!!

I also usually add my Elevate Coffee to the pumpkin shake so I end up with a kinda of Mocha Pumpkin Pie goodness. The addition of the Elevate Coffee helps me go all day with out feeling hungry!!! And puts me in a good mood. It has good natural stuff in it that really helps with mood ups and downs and food cravings.

What not to serve your holiday guests or your dog:(

Thanksgiving is right around the corner and I’m already stressing about carb overload! Ugh! The struggles of a 5′ middle aged home style cook! Everything in a thanksgiving meal is loaded with carbs with the exception of turkey, butter, and pumpkin pie filling. So if your happy with just those three then your good to go; turkey with a big slab of butter on top sounds just yummy…doesn’t it!

In an ongoing quest to make some dish healthy and low carb I attempted a recipe I found on Pinterest (respecting my fellow blogger, I will not name the source, she would thank me:)

So here goes…my first attempt at making low carb stuffing in muffin form; fingers crossed please?

Low Carb Bread

Not the real stuff!

First off you need to come up with a decent low carb bread recipe and for this bread lover that’s not the easiest thing to do. I’ve tried several before and didn’t like any of them. They were either too eggy or tasted like a big piece of a raw 2×4! I found a new one on Pinterest I thought might be just the one; you whip it up in the blender…my kinda easy!

After mixing 4 eggs, 1/2 cup of almond flour, a little baking soda, garlic salt and baking it for 45 minutes, I let it rest for about 30 minutes. It was still really moist in the middle. So as usual, I did not follow the rest of the recipe and decided to toast it in cubes instead of crumbing it with a fork. Hmmmm, see where I’m going with this? This girl sometimes had the “x” marked by usually does not follow directions. It’s a character flaw for sure!

The toasting definitely dried it out.

When the onions, garlic, celery, jalapeno, butter, broth mixture was added and mixed in it definitely looked like the real stuff…but it didn’t hold any liquid! That turns out is key.

Forging ahead I proceeded with the “ingenious” part and packed the mix into the muffin tin. Now after baking the “muffins” until almost dog dodo form, this is how it ended up. Really chewy, grainy moist, and burnt egg tasting. The only good part was the picked out charred onions and celery. Yum, right???

Never Assume You Know More Than The Original Author!

Long blog short; never assume you know more than the original recipe when attempting low carb keto food.  The only way this would have been salvageable is if you had a boat load of really good gravy on top! If I hadn’t baked it “till death do us part”, it might have been pretty good low carb stuffing…if there is really such a thing…
