
Easy crunchy air-fried beef burritos are a really good, fast weekday meal. An easy lunch or snack that even your kids can put together. Made with leftover taco meat these yummy beef burritos can be ready in about 10 minutes.
Of course, you don’t have to have an Air Fryer to make these. Baking these on a cookie sheet in the oven works but it takes twice as long. Ask for an Air Fryer for the holidays or better yet get your kids one…they can start making you dinner!!

CRUNCHY BURRITO INGREDIENTS
- tortillas
- spreadable cheese
- taco meat or turkey taco meat
- salsa
- cheese
- spinach & cilantro
- avocado
Optional Ingredients
- re-fried beans
- mexican rice
- rotisserie chicken
- ground chicken or turkey
- Spicy Queso (Rotel cheese dip)
- left over turkey and dressing!!
The options are endless!!! You could even make these with italian ingredients!! Add some pepperoni, salami, a little marinara sauce, and this Italian Queso…OMGosh!! Yumm!!

BURRITO AIR FRYER INGREDIENT ASSEMBLY ORDER
- STEP ONE – Low Carb Tortillas (Mama Lupes). By my calculations, these yummy tortillas only have 3 net grams
- STEP TWO – spreadable cheese. I use Laughing Cow wedges. They come in lots of flavors and are 1 Weight Watcher points.
- STEP THREE – taco meat. In the recipe, I used leftover taco meat. If I was going to make these for dinner the taco meat wouldn’t be leftover. I have also used Turkey Taco Meat and it’s just as delicious!
- STEP FOUR – salsa. I used store-bought in the recipe but this Easy Homemade Mexican Salsa would be perfect in this dish.
- STEP FIVE – grated cheese. Mild cheddar was used here but pepper jack, sharp cheddar, a combination of both would be yummy.
- STEP SIX – spinach & cilantro. This step is where I probably lost most of you all. THIS STEP IS OPTIONAL:)
- STEP SEVEN – roll it up like the diagram below. Spray with spray oil and place in the Air Fryer basket. Cook at 390 degrees for about 8 minutes. I would check on it at about 6 minutes, not every Air Fryer cooks the same.
- STEP EIGHT – mashed avocado with spicy seasoning and salsa mixed in. Include this inside or top with the avocado outside. THIS STEP IS OPTIONAL AS WELL, lol:)


OVEN-BAKED METHOD
Follow all the instructions above but use your oven. Set it to 425 and cook for 15 minutes.

LOW CARB LOVE!!
These yummy burritos are low carb!!! What? Yes, they are! I use Mama Lupe’s Low Carb Tortillas and they have like 3 net carbs! I like them better than real flour tortillas!
All the cheeses, meat, salsa, and veggies are all low carb. The air fryer adds the quick intense heat making the crunchy, gooey goodness. You will want these burritos every single day!!
